we have those here, also... the headlights make their eyes shine as they're lurking in the brush, just waiting for the right moment to leap out in front of the car...happened to me once; pretty much destroyed the front end...
I know someone who ran into a sheep once. Almost destroyed the car. The sheep just shook itself off and staggered away apparently unharmed..... Tough things sheep!
